**FOOD, BEVERAGE AND HOUSEKEEPING MANAGER - Extreme adventure luxury destinations**
Our Client offers an extreme adventure destination experience which is at the top end of luxury and exclusivity. The company is multi-award winning with a high global reach of both clientele and employees.
A multi-faceted role for a Food, Beverage and Housekeeping role which essentially oversees all tangible aspects of what a guest would experience. This includes the in-camp staffing, food and beverage service, and accommodation. The role is all encompassing and looks after the full “chain” required to deliver all tangible elements.
- Recruitment of relevant roles of the upcoming season:
Chefs, Food and Beverage team in Cape
- Compilation of staff training manuals for chefs and housekeeping team;
assist with staff training programme for hospitality department, for all camps
- Pre-season briefings and post-season debriefs with chefs, FOH, Camp Assistants
- Preparation of budgets (CAPEX and OPEX) for all material purchases as well as for the entire season’s food, beverages and catering need
- Ongoing management of costs in line with set budgets
- Co-ordinate all aspects of food preparation and menu planning
- Co-ordinate all aspects of beverages and cocktails for the season
- Work with Cargo team to ensure all logistics, transportation and storage is taken care of for food and beverage;
ensure all packing and manifesting is correctly handled and supported by the necessary documentation
- Purchase of items/equipment required to support delivery of food and beverage menus for the season
- Co-ordinate all aspects of housekeeping to ensuring all linen / towel requirements are met;
Manage inventory of allhousekeeping items pre and post season
**The person**:
- Minimum of 10 years’ experience within the hospitality sector, with hands on experience leading and executing the operational areas mentioned above
- Proven track record delivering all of the above to the highest standard, meeting the expectations of well-travelled and very discerning guests
- Excellent organisational skills, able to multi-task and handle multiple (and conflicting) priorities
- Excellent communication skills (oral and written)
- Excellent planning and strong project management skills
- Agile, unflustered and able to problem solve
- Thrives under pressure, shows the tenacity to keep on going no matter what
**Salary**:
R35,000.00 - R40,000.00 per month

- Cape Town, Western Cape:
Reliably commute or planning to relocate before starting work (required)
