job description

To maintain an efficient F&
B operation in respect of quality of food and beverage and service
- Manage and oversee the daily operation of the restaurant, bar and banqueting Department.
- Controlling costs and achieving set margins
- Ensuring guest comment results meet or exceed the Group average for all F&
B attributes measured.
- Ensuring that the required F&
B procedures, operational and administrative systems and controls are in place.
- Control of restaurant, bar and banqueting operating equipment.
- Regular operating stock and operating equipment stock takes are conducted, and variance reports reconciled.
- Accurate compilation of all required F&
B reports, ensuring thatit is timeously distributed to the relevant personnel concerned.
- Staffing levels and rosters are maintained to meet operational requirements and within budgeted parameters.
Facilitate the development of staff through the training plan.
- Control of restaurant, bar and banqueting operating equipment.
- Compile trading summary and provide COS for F&
B
- Occasional Duty Manager Shifts
